It seems that beans and greens can be slightly different depending on who is making them. A favorite in the jagoff houses is Johnny Angel’s version! Johnny Angel recently cooked some Pittsburgh treats at the Vangura Demo Kitchen and treated everyone to his music career stories while he cooked! Below is his “secret” beans and greens recipe.

Ingredients:
- 1 head of Escarole cut in strips
- 1 can Great Northern Beans
- Olive oil (2 tablespoons)
- 1/2 cup Chicken stock
- 1/2 small Onion minced
- 2 cloves Garlic minced
- Oregano to taste
- Basil to taste
- Salt and Pepper to taste
Large skillet add oil med heat
- Sauté onions
- Add greens stir to cover greens
- Add oregano/Basil/salt/pepper stir til greens start to wilt Add chicken stock Cook til greens are tender Add beans
If you’re really up for some spice, throw in a few banana pepper rings and maybe even a few chunks of hot or sweet Italian sausage!!!
