Cadbury Blondies

Cadbury mini eggs are my favorite candy out there! About ten years ago, I came across this recipe on chef-in-training.com: https://www.chef-in-training.com/cadbury-mini-egg-blondies/

I knew I had to try them as soon as I saw them. That first year, they were a huge hit! Since then, I have planned to make them yearly, but my family always requests them.

Especially my Mom, my nieces, and my brother-in-law! My daughter and I have loved baking together ever since she was little and I always make sure she can be in the kitchen with me helping make them. I always jazz mine up with extra sprinkles and have learned that you can make them for any occasion, not just Easter!

Last year I made 2 batches – one with spring colored sprinkles for Easter for my family. And another with bright colored sprinkles for my God Daughter’s Encanto themed birthday party! I now buy several bags of the Cadbury mini eggs when I see them out for Easter so that I can have them all year round!

CADBURY MINI EGG BLONDIES
recipe from: Bakeaholic Mama

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 2 cups milk chocolate mini eggs

In a medium sizes mixing bowl sift flour, baking soda and salt together.
Melt butter over medium heat. Once melted add to the bowl of your electric mixer. Cream together with sugars.
Add in vanilla and eggs mix until creamy.
Slowly add in flour mixture until it is incorporated.
Fold in Mini Eggs.
Spread batter into a greased 8×8, 9×9, or 11×7 baking dish.
Bake at 325 for about 40 minutes or until a tooth pick is inserted in the center and comes out clean. **I baked mine at 350 for 25-30 minutes
Let the bars cool for 30 minutes before slicing.
